But maybe moving from QMail to Postfix would be extremely reasonable
and the same question exists.

Maybe because Postfix is more stable, better maintained, and more
maintainable than QMail? That's just based on my personal experience
of maintaining several significant sized networks on which I have had
Sendmail, SMail, MMDF, QMail, and Postfix running.

Yep, totally agree with you. However, since I'm considering moving to

While you are at it look at postfix (www.postfix.org). It doesn't require
large quantities of drugs to understand the config files.

Postfix also runs as lots of little processes which can be chroot jailed
to reduce the effect of any break-ins.

check out postfix @ http://www.postfix.org, and the mailhelp archives @
http://moongroup.com for testimonials

I think your requirements ordering is screwed, but not to worry because
postfix will take care of them all.
